Raw Recipes From the May RCT Grads

Juice
:

6 small apples
1 big cucumber
huge handful spinach leaves 1/2 bunch coriander

Juice and feel amazing!

Prepare:

CARAMELIZED ONIONS

Finely chop onions, toss in olive oil and tamari, place in dehydrator.

VEGETABLE SIDE

Asparagus: toss in lemon juice and olive oil and marinate for 2 hours before serving. Mushrooms: marinate in olive oil and orange juice. Dehydrate over night.
Fennel: chop into julienne.
- arrange all three items on plate and drizzle with balsamic reduction.

TOWER OF THE CENTURY

Pistachio Pesto:

1 c basil
1/3 c pine nuts
1/2 c pistachios
1/4 c lemon juice
1/4 c olive oil
1/2 t sea salt
1/4 c nutritional yeast flakes or 2 T of powder 1 clove garlic


Neva‘s Coffee
Truffles:

Raw chocolate (Sayuri‘s basic recipe with 1c cacao powder + 1c cacao butter) adding: - coffee and mint flavouring
- 1/2c honey
- a handful of cacao nibs

Then blend in Vitamix:
3c cashews soaked
1c water
1t vanilla bean paste
1/3c honey (or palm sugar)

Set some of the first chocolate mix aside to dip the truffles in later. Mix the rest + the cashew cream in a bowl, form little balls by hand, refridgerate. Once set dip in liquid chocolate, refridgerate again.
 

Green Fig-Vanilla Smoothie
1Ltr:

1/4 cup dried figs + 1/4 cup date paste or dates (optional)
3 cups coconut water
4 Tbsp  hemp seeds
1 tsp vanilla paste (4 vanilla skins blended with 1c water = vanilla paste) 1 tsp maca powder
1 tsp chlorella
1 tsp spirulina
1 tsp lucuma
1 tsp bee pollen
Blend well in Vitamix.

Learning With Living Food


Are you constantly looking for a recharge?  Something to help you get through the day.  Feeling like your just not quite optimal on your daily routine and physically, mentally and emotionally drained.  Ever think that maybe it's the food your eating?  Thought it might be but not knowing what to do about that?

It's easy to get lost in the black hole of 'scientific evidence' regarding what we should eat and when we should eat it.  There are disputing studies popping up all over the internet regarding 'superfoods', good and bad fats and oils, ratios of proteins, carbs and calories, meat vs. veggie, all of which leave most of us longing for our conditioned comfort foods.

Sure we can wade through the pages of perfect data and testimonials of people we don't actually see or know, but we’ve got a couple better ideas.  Next time you have a craving for a big bowl of buttered popcorn and a movie, look for one of these inspiring documentaries:

During the two intensive weeks, you will explore therapeutic yoga, including assessment, modifications, adjustments and how to adapt your teaching for students with injuries, issues or specific goals. You'll learn the core principles of prenatal yoga through a vinyasic perspective. You'll also learn how kids yoga can bring play and laughter to your teaching when working with children and adults alike.

We just completed another phenomenal YTT. Congratulations to all of the trainees who worked their asses off (you know) with such determination - they made great progress. Also, huge thanks to the Raw Chef Trainees, who outdid themselves with the incredible meals they prepared for us. We were fortunate to have had you with us. May massive success come to all the trainees in whatever adventures are next.

We're already looking forward to October, where in addition some of our regular and beloved guest faculty (Edward Clark, Chris Kummer, Joshua Michael, Simon Borg Olivier),we are psyched to be hosting Kino McGregor and Philip Urso for their first time with us.
