Strawberry Swirls Vanilla Ice Cream
Vanilla ice cream
2 vanilla bean, split
1 3/4 cups water
2 cups cashew nuts, soaked
3/4 cup maple syrup or honey or pitted dates
2 cup strawberries
1/4 cup pitted dates
cacao nibs, goji berry, chopped cashew, bliss balls crumbles, crunchy buckwheat, etc.
To prepare the strawberry sauce, blend the dates and strawberries together.
For the vanilla ice cream, blend all in a high power blender until smooth and silky. Pour into an ice cream maker and follow the instructions. Alternatively, freeze the mixture and stir it every 2-3 hours.
Stir in 1 cup of the strawberry sauce before the ice cream becomes completely frozen.
Decorate with the rest of the strawberry sauce and any of the optional crunchy toppings.
Serve and enjoy!

It's just over a month into 2011. How are you feeling with the direction of this year? One of the greatest benefits to checking in with ourselves is that we remember we have the opportunity to shift. There's now 11/12 of this year to go, what would we like to feel when 2012 rolls around?
I'm ever amazed by the mysterious forces of existence, the power of setting our intentions, rolling up our sleeves and diving into the juicy work of our lives, and then standing aside and smiling at the results (or seeing the mess and getting back in there again to create it anew).
Below you can see about our newest creation - Radiantly Alive yoga at Taksu - far ahead of the timing I'd guessed. And while we're nascent, we're bubbling with excitement, joy and satisfying service. I hope you feel similarly about the first 1/12 of 2011, and/or are inspired to recreate the other 11/12.

We're thrilled to announce that the May 2011 Radiantly Alive Raw Chef Apprenticeship Program will be led by world renowned chef and dear friend, Elaina Love.
For five years, we've been working with the top raw chefs in the world to create amazing food for our high vibe yoga teacher trainings. Now, aspiring raw food chefs have the opportunity to study and work with Elaina Love and Radiantly Alive in tropical Bali.
Combining the best of many elements - skilled senior chefs, the practical and rewarding experience of preparing food for yogis, the opportunity to participate in portions of our yoga training, a dynamic and enthusiastic educational staff guiding the apprentices, plentiful and incredible all-organic local fruits, vegetables and superfoods (coconuts, cacao, cashews and more) - and all set in the beauty of spiritual Bali - we now take the apprenticeship program to another level.
Elaina will guide the apprentices' education through a mixture of practical and classroom experience. Receive an in-depth manual which includes the philosophies and recipes behind what you are learning. Integrate how to make an array of gourmet, raw, vegan foods that you can in turn, teach or cater anywhere in the world.
You will experience hands-on daily catering for a large group of yoga students while learning the ins and outs of making delicious, gourmet, beautiful dishes that include breakfasts, breads, pastries, desserts, ethnic entrees, wraps, salad dressings, dips, dehydrates, chocolates, elixirs, beverages, soups, exotic fruits and ingredients, and so much more!
The classes will include continued knife and kitchen tool training, food handling for safety and hygiene, catering for large groups, flavor balancing, ordering and procurement, food production, running a catering kitchen, catering for specialty groups (diabetics, athletes, elderly, children, and health seeking adults), finding your specific body type, conscious language for creating the life, health and business you desire, how to be vibrant at 100, the 80-20 Maintain-Cleanse principles, low glycemic eating and how to use stevia and other sugar free sweeteners, the use of Irish moss and other thickeners, stretching recipes, creating on the spot with what you have, and so much more!

|Level II June 2011: Integrating Philosophy and Asana
|For those of us embarking farther into the world of teaching and self study of yoga, the chance to step away from our lives and revisit and strengthen our commitment to our practice is precious and valuable.
It's for this reason we created the Level II 500 hour modules - two week immersions into the physical and philosophical aspects of yoga, directed by today's masters of the yoga world, each of which feature a unique theme relevant to the modern yogi.
This June, join Edward Clark, Nicki Doane, Alanna Kaivalya, Joshua Michaell and Daniel Aaron as together we explore Philosophy and Asana - the art of integrating yoga philosophy in our classes, our personal practice and our lives.
